Welcome!

Well, I finally succumbed to the pressure of blogging and have started my own! What will I blog about? After much thought, I decided I would use this blog as product development for my hope-to-be-published cookbook, Unbaked. You see, although I am a certified pastry chef and have worked in the industry here in Toronto, I have an unusual confession. I hate baking at home. I, like many of you, prefer something much simpler for family and entertaining desserts. I have always prefered the production and eating experience of an unbaked dessert. My favourite? Probably a sabayon over fresh fruit. Or a mousse! Yes! A mousse! I have very fond memories of discovering chocolate mousse on my first trip to France. Maybe that's where my love of unbaked began. So here you will find pictures, recipes, frustrations and jubilations through my recipe testing for this manuscript. I welcome all opinions and suggestions and hope you will join me on this journey!
